In this session, Willem from Juthan Chocolate will guide us through a bean-to-bar chocolate tasting that helps us notice things most of us miss. Together, we'll explore how flavour develops, why aroma matters as much as taste, and how slowing down changes what we experience.
Starting with cacao's journey from origin to finished bar, Willem will show how the choices made along the way shape what ends up in our mouths. Why does one chocolate reveal notes of fruit while another leans towards nuts, spice or smoke? Why do two chocolates with similar ingredients taste completely different? And what exactly is the difference between taste and flavour?
